An upmarket chain of restaurants and delis, Ottolenghi has operated in London for over 20 years, with its latest local addition being a new location in Richmond. Known for its commitment to quality and innovation, Ottolenghi has consistently prioritised excellence in food.
A Legacy of Quality
For over 20 years, Ottolenghi has set the standard for vibrant, high-quality dining in London. With recent expansions to Bicester Village, Richmond and Geneva, the brand’s growth demanded a new approach to maintaining its signature excellence.
The Challenge
As demand increased, so did the strain on existing kitchens. Ottolenghi recognised the need for a Central Production Unit (CPU) to streamline production, strengthen consistency, and support its expanding network of restaurants and delis.
Our Role
Having partnered with Ottolenghi for many years, I was entrusted with the full design of the new 2,300m² Holloway CPU — from equipment layout and workflow planning to system development and production flow optimisation. The completed design was then passed to architects to bring to life.
The Outcome
The new facility now integrates a first-floor production unit, a dedicated webstore, a second-floor test kitchen, and centralised offices. This purpose-built space enables smarter planning, efficient purchasing, and precise cost control — while supporting expanded menus, increased catering capacity, and continued growth.
Fully approved by the FSA in 2021 and SALSA-accredited in 2022, the site continues to expand its production. Meanwhile, with our full support Ottolenghi’s restaurants, delis, and event catering operations consistently achieve 5-star EHO ratings.
